To fully maximize the benefits of science and technology in establishing sustainable livelihood activities, a group of entrepreneurs from Sto. Tomas, Batangas underwent a training on meat processing that was provided by the government through the Department of Science and Technology (DOST).
The St. Joseph STB Multi-purpose Cooperative received the technology training on meat processing and current Good Manufacturing Practices (GMP) held at Barangay San Jose, Sto. Tomas, Batangas, last 14 September 2022.
The training covered technologies on processing of meat products such as tapa, tocino, longganisa, burger patties, chicken nuggets, and siomai. A GMP was also integrated into the training course to ensure the implementation of food safety systems and safeguard the quality of the products that conforms to accepted industry standards. Participants had a hands-on activity on processing each product with focus on strict compliance to food safety standards.
The processing technologies used in the training were developed by the Batangas State University – Food Innovation Center (BatStateU-FIC). Dr. Marielli Katherine C. Untalan, Center Head of BatStateU-FIC, facilitated the technology training while Mhark Ellgine A.
Libao and John Maico M. Hernandez, both members of DOST-CALABARZON Food Safety Team, facilitated the discussion on GMP. The training was done in close partnership with the City Government of Sto. Tomas, Batangas through the City Livelihood Entrepreneurship & Development Office.
Meanwhile, cooperative Chairperson Eric V. Manalo thanked DOST-Batangas for assisting them in carrying out their intention to capacitate their members on meat processing so they can finally venture in this business. He also expressed their interest to avail the other DOST programs and services to improve their cooperative.
The science department, in its role to provide practical technologies to micro, small and medium enterprises (MSMEs), have for years been providing capacity building to different cooperatives and communities to enhance their livelihood and better improve their income.
